A red palace in the heart of Puglia’s white city of Ostuni, the Paragon 700 is the new kid on the block that is really ruffling the feathers of other boutique hotels across this part of Puglia.  Quintessentially Puglian, it has an incredibly cosmopolitan soul and stands in start contrast to the surrounding whitewashed buildings.

The former water chamber of the original palace has been aesthetically converted into a unique spa that offers Turkish hammam, Himalayan salt wall, multi sensory shower and a natural whirlpool that is dug into the ground.

The Lounge Bar features an 8.5m long stone bar counter – perfect for the staff to serve local wines and spirits along with signature cocktails created by the inhouse mixologists. Wine tasting can also be arranged in the cellar with the resident sommelier. The restaurant (also open to non-guests) offers a culinary experience with a sophisticated touch, impeccable service and what has been described as the best brunch in town. The old olive mill transforms into a convivial table which with the state-of-the-art kitchen combines to create a modern ambiance steeped in Puglian history.

The 15 metre pool surrounded by loungers and lush gardens (the only one in the centre of Ostuni) is the perfect spot for relaxing under the Puglian sunshine. The garden area promises daydream, a space to read, or a space to simply be.
