Filled with the rich history of Malta and laced with the legacy of the Knights of St John, the luxurious 5 star boutique Hotel AX Rosselli is a truly spectacular piece of living history.  Once the residence of a noble goldsmith, today, personal butlers welcome every guest and the Michelin starred restaurant Under Grain is a delightful venue for dinner.  The 17th Century Valetta Palazzo today is a refined modern spot and deserves every one of it’s awards and accolades.

Each of the 25 rooms and suites here have been individually designed within the framework of the building but are deceivingly modern and contemporary. The tiny balconies are the only nod from within to the building’s history. The over-riding colour scheme within the rooms contains white, black and shades of grey set off with large print wallpapers – the look is loved by the Maltese. Three of the rooms have the added benefit of a private sauna.

The food offering here comprises Grain, Under Grain and Over Grain (the grain is cloth rather than from the field) hence the theme of tailoring.   Breakfast is served in Grain and is a fresh buffet along with cooked options (there is also a specialist vegan option).  During the evenings, Grain, in contrast to the norm, offers all its wines by the glass rather than by the bottle.  Under Grain is the Michelin starred restaurant where dining is a refined experience based on local ingredients with global influences.  Under Grain is an adult only venue and beach wear is not permitted with gentlemen also being required to wear long trousers.  Over Grain is up on the rooftop and is perfect for cocktails, gourmet bites, charcuterie and cheese boards against a backdrop of the stunning Valetta skyline.

The peaceful roof terrace offers rooftop views over Valetta and out to sea. There is a small plunge pool with uninterrupted views surrounded by terraces with sunbeds and comfy sofas adjacent to the bar area.
